Raw Garlic Broccoli Salad

Here is another favorite salad.  It is sort of a spin off of the Kale Salad, but is even more flavorful with the addition of raw garlic.  I never knew that you could eat garlic raw before I got into the whole Raw Foods thing.  Here’s an interesting article on the health benefits of raw garlic.

So here’s the recipe:

  • One head of broccoli, chopped into bite sized pieces
  • Was that too obvious?

The dressing is:

  • Juice of one lemon (about 2 Tbsp?)
  • Equal amount of olive oil
  • 2 cloves crushed raw garlic.  I crush mine using a garlic press.

Pour the dressing over the broccoli, add salt to taste (it also helps break down the broccoli during the marination so it’s not so tough), stir well.  Let marinate for 30 minutes and enjoy!
