Carrot Ginger Raw Soup

This is the soup that I brought to the Boulder Rawluck.  It is so fresh and creamy and delicious – a perfect summer soup.

I practiced my food photography skills on this dish, too.  I set up some custom manual settings on my fancy camera (rather than using the automatic settings) and it worked!

Here’s the recipe if you want to try it sometime.  I adapted it from something I found on a random Raw Food blog awhile ago.  It can be kind of labor intensive or easy, depending on the short cuts you take.  I did the labor-intensive version for the Rawluck, but the easy version for myself yesterday.

  • Juice 5 lbs carrots
    • Easy version: 25 oz store bought carrot juice. I get mine at Costco.
  • Juice 2” knob of ginger
    • Easy version: 1 teaspoon of ginger powder.
  • Juice of about 10 small limes.  Mine were really dry, though, so if you had good limes you could use less.
  • One Avocado

Juice the first 3 ingredients together.  Pour the juice into your blender, add the avocado, and gently blend until smooth.  Pour into bowls to serve, garnish with mint if you are practicing your food photography skills

This soup keeps really well in the fridge for a few days.  The lime juice keeps the avocado from turning brown.

    good to be reading about your adventures again! zach is so big now. more cuteness to go around i suppose! i hope he feels better soon.

      Hi Taisuke! Yay, you’re back – we can keep in touch again. We are totally loving living vicariously through you guys as you enjoy Sayulita. It is beautiful there, and we really think you should buy some land and build your earthship. We will come visit. And I am DYING to read a blog about someone that is building an earthship. DO IT!!

    Sounds great. What if you don’t have a juicer?

      If you don’t have a juicer you should just buy some carrot juice and use Ginger powder. It will still taste delicious!
      If you WANT a juicer I recommend you keep your eye out at garage sales. I got mine for $5!!
